Pasta risotto (orzotto) from Nigella Lawson

So today I wanted to make something that was easy but tasty and off course quick.
Awhile ago I bought Nigellissima from Nigella Lawson.
Nigella convinced me to make this succulent dish.

You will need following ingredients for two hungry people:

  • some olive oil
  • garlic
  • 150 gr pancetta cubes
  • 150 gr peas (or one zucchini if you don't have peas on the hand like me)
  • 250 gr orzo pasta
  • 625 ml boiling water
  • salt
  • 1 tablespoon of butter
  • some parmesan
  • pepper
Cut the zucchini in small pieces and bake them in some olive oil.

In an other pan: let the oil heat up, ad then the garlic and the pancetta cubs.

Once the pancetta is all crispy add in the zucchini.

Add the pasta to the pan and add the boiling water.

Add a little bit of salt.

Let it cook for ten minutes or until the pasta is tender.

Add the butter and the parmesan and serve!

Buon appetito!

Chocolate Christmas Cookies

So today I have an Italian recipe for you.
I'm making chocolate christmas cookies.

They are full of chocolate, they are rich and they are christmassy because of the icing sugar.
I've taken a lot of inspiration here and here.

Without further doing, here is the recipe.
You will need:

  • 125 gr of dark chocolate
  • 105 gr of flour
  • 55 gr of regular sugar
  • 27 gr of butter
  • 1 egg
  • a 'pinch' of baking powder
  • a pinch of salt
  • some icing sugar to turn this chocolate cookies into christmas chocolate cookies

Melt the dark chocolate, once it has melted add the butter.

Sieve the flour put it an a bowl and add the baking powder and the salt as well.

In an other bowl put the egg and the sugar together and whisk until you get an 'aery' consistency.

So now we just have to assemble it.

Add the egg mixture to the chocolate and add then the flour mixture.

Let it cool down for an hour into the fridge.

During the rest time, put some icing sugar on a plate.

After the resting time, make some balls and pass it into the sugar (don't forget to preheat the oven to 170°)

Put them on a baking sheet.

Once the oven is preheated place the baking tray in the oven and let it bake for about 10 minutes.

And voilà you have the perfect and easiest chocolate christmas cookies!

Ps. Next time I will try to make them bigger.
